Maker's comments | Single orogin dark chocolate made from cacao grown in Upala - Costa Rica, with crunchy Upala nibs and "fleur de sel". In my small workshop in Woodbridge (Virginia), I handcraft chococlate starting with the whole cacao bean. I work to coax out the best flavors with each step - from roasting, cracking and winnowing the beans, refining, mixing and conching, to tempenring and molding the final bars. Enjoy! |

Tasting Experience | The strong and pleasant chocolatey smell freed when opening the wrapper is confirmed in the mouth. This bar melts nicely while delivering a very strong chocolatey flavor. The crunchy nibs add to the already consistent texture of the bar. There is a hint of fruitiness at the second stage of eating. Then, the after taste is mostly earthy and chocolatey. The salt is not really discernable but it certainly enhances the bitterness. Overall, a quality chocolate with a strong personality. Although not mentioned of the package, I suspect the beans used here are Trinatarios. |
