Eating it | When opening the wrapper, this chocolate bar produces a pleasant earthy aroma. WHile melting in the mouth the chocolatey and earthy aromas are confirmed and enlarged. We could not identify any acidity and were pleased with the hint of bitterness increasing the chocolatey aroma. The after taset is long lasting and earthy. Overall, an excellent chocolate. |
Cooking it | Because it comes in a large block, this chocolate needs to be shaved or otherwise broken in smallerparts to be used in cooking. The 65% cacao make it easy to temper and make it perfect for dipping ganaches or other bonbons. It With it earthy and chocolatey flavors, it provides a great complement for sweet insides. |
