Maker's comments | Dark chocolate (70% cacao minimum, pure cocoa butter). From the mystical name of the Caribbean island where Christopher Columbus landed in 1502, Ganaja delivers an alliance of "unpublished" cocoa beans, between the subtil Criollo, and the strong bouquet of the Trinatarios and Forastero. This "Grand cru", which recipe is kept secret, has a high content of cacao and delivers a surprising bitterness that covers a whole range of warm aromas. |

Tasting Experience | Opening the black wrapper frees a strong earthy flavour mixte with a chocolatey aroma. The bar breaks with a clear "snap". In the mouth the first sensation is the confirmation of the earthy notes. Then some pleasant bitterness quicks-in together with a hint of acidity. The texture is commensurate with the taste : solid but soft. The after taste is essentially chocolatey and earthy. Overall an excellent chocolate bar from Caribbean beans. P.S Guanaja is a small Island belonging to Honduras. The beans used in this bar come various other Caribbean locations. |
