Eating it This couverture chocolate is part of Valrhona's "Grands Crus" collection. The shoe horse pallets are easy to measure and melt. Because of their size, the pallets can harding be used for decoration. However, they can be eaten "as is". They deliver a very strong chocolatey aroma. The total absence of sugary flavors increases the cacao feeling. The pallets leaves a long lasting chocolatey aroma. Overall, a great experience but probably too bitter for non fanatics. Also, the lack of fruitiness aroma reduces it appeal as a chocolate bar.
Cooking it This chocolate is made for cooking preparation it is wonderful at it. The pallets are of a good size to measure when tempering and the bittersweet aroma makes it ideal to mix with other fruity aroma in Ganaches or other preparations. This is a wonderful "professional" product.
