Maker's comments | Trinidad, the most Southernly of the Caribbean Islands, is a historic source of Trinatario cocoa beans. Nestling in the fertile hillsides of Montserat. te little village of Gran Couva is home of one the island's oldest plantations. On its rich, humid soils, the Estate planter's grow their precious crop according to the traditional methods necessary to extract all their subtle aromas of dried mint and spices. |

Tasting Experience | Trinidad and Tobago produce approximately 300 Metric tons of cacao bean per year. So, a pure Trinidad bar is something special. As the place where the Trinatario bean was born Trinidad has very high quality pods, renowned for their mix of fruitiness and cacao flavor. When opening the foil wrapper, this Valrhona bar does reveal fruity notes with a cacao aroma. These aromas further expand while the soft and creamy texture melts in the mouth. However, they are here weaker than we would like and I could not identify many more sensations beyond a hint a cherry or spices on the finish. The after taste is not particularly long but pleasant and focused on a sweet cacao flavor. Overall a very good chocolate bar, but below what its origin were promising |
