Maker's comments | In April 2009, Bertil Akesson Jr., together with his partner Dr. Angelo Calmon de Sa, puchased the historic Fazenda Sempre Frime in Bahia, Brazil. This 120 Ha. cocoa plantation is right in the middle of the Mata Atlantica, the wild forest with the highest biodiversity on earth. We were able to recreate a social structure and our best reward was to hear the community referring to the Fazenda as a "Paraiso" (paradise). We are growing there traditional and astonishing Forastero cocoa variety. This chocolate has expressive notes that evoke wood, autumn scents and the local Pitanga fruit: a perfect match to the aromatic notes of honey, malt and maple syrup present in our Brazilian Bourbon coffee nibs. |

Tasting Experience | The square Akesson's package delivers a chocolatey aroma where coffee notes can be identified. While melting in the mouth, the fruitiness and floral scents come out together with the coffee aroma. No acidity nor bitterness. The second stage of melting shows scents of copper and somehow feels pleasantly sweet. The after taste is long and consistent with the floral notes. Overall a superb chocolate for sophisticated chocolate lovers. I usually find coffee overwhelms the chocolate, but in this case, it is the right amount just to spice-up the cacao and enhance the sweeter aromas it has. |
